Abstract
Several chemical analyses were carried out, by standard methods, on the skeletal muscle of Sarotherodon galilaeus (Syn. Tilapia galilaea), an economically important Cichlid fish obtained from Opa Reservoir, University of Ife. On the whole, seventy-six (76) specimens of various sizes were used. These analyses include quantitative and qualitative estimation of dark and white muscle fibres, protein, lipid, moisture and ash components. The results obtained show that the dark and white muscle fibres occurred in the ratio of 9:91 in the fish body. On the average, moisture, protein, lipid and ash formed 81.08%, 16.26% 1.42% and 1.03% respectively of the fish muscle. These figures were affected by various factors like the size and sex of the fish and the location from which the muscle was taken. The various components of S. galilaeus muscle were found to interrelate with one another. A very high positive correlation was obtained between the moisture content and the ash content of the fish muscle, while the relationship between moisture and crude protein content gave a very high negative correlation. A non correlation occurred between the moisture content and the totallipid content; between the total lipid and crude protein content, between the ash content and the crude protein content.
